I’m a Jam Fool

After conquering my fear of home canning the weekend before last, and the results turning out to be  so absolutely delicious, I had to give it another try!  I had high  hopes, that the apricot tree in our backyard would still be bearing fruit, when we returned back to the dessert last weekend.  BUMMER!  Not only had I missed out on the gorgeous 100+ degree weather (seriously, I love hot weather!!!), but I had also missed out on 100′s of  glorious, homegrown apricots :-( .  Oh well, the birdies got a feast :-) .  Luckily, I had chopped and froze just enough to make another batch of apricot jam, yippee.  I also had 3 baskets of strawberries from the Carlsbad, C.A. farmers market, that I wanted to experiment with, as well. 

While searching for recipes online, I discovered some that used a type of pectin, that incorporated juice concentrate to sweeten jam.  I had to get my hands on this stuff!   I wanted to try to make some with AloeAdvanced™ or AloeBoost™or BOTH.  I was really pleased to find Pomona’s Universal Pectin at Whole Foods, that way I didn’t have to wait for it to come, if I ended up having to order it on Amazon.  This pectin it AWESOME!  It’s easy to use, and a little goes a long way.  The new Vita-mix and food processor I got for my Birthday came in real handy too, THANKS BABE!!!  I do have to admit though, that things didn’t turnout so great this time :-( …… at first :-) .  

I’m not sure why, but I didn’t really taste the apricot first, before putting it into the jars and processing it.  Oops!   I thought the strawberry might be OK too.  So, I went ahead and put the jars into process before having my sweets, taste my sweets.  Oops again!!    The official taste tester definitely wasn’t impressed, and he came up with a great idea.  Add more sweetener, LOL!!!  Of course, why didn’t I think of that?  I was thinking about just throwing them out, but didn’t think I could bring myself to do that either.  Easy enough, I just put the jam back in the pan, mixed a 1/4 t. pectin in with agave for the apricot jam and with a AloeAdvanced/stevia mixture for the strawberry jam.   Then brought the jam back to a boil, and stired in the pectin/sweetener mixture until well combined.  Then, I just put it back into sterilized jars, and processed them again for 10 minutes.  Pretty darn easy;-).

Granted it took me two days to get it right, but the jam is quite tasty, if I do say so myself :-) !  Told ya, I’m a Jam Fool!!!
