Everything is better with Aloe Vera!
Yesterday was  a beautiful day, it was  my fiance’s birthday!  Woooohooo, that means I had a excuse to make a cake and why not use three of my favorite ingredients; Aloe, ( of course, lol) chocolate and peanut butter. Seriously, does anyone not like chocolate and peanut butter?  I did cheat a little and bought a box mix, a gluten free one I was curious to try out. So if the cake mix is gluten free and all natural, and I added Aloe, does that make this divine goodness healthy?   I wish I could say yes, however I know better. It’s OK though, because it is a very special day!  Well, I can’t keep something this tasty to myself, so check this out.
Chocolate Peanut Butter Birthday Bliss
- Sof’ella Chocolate Cake Mix (1lb. 1oz.)
- 2/3 cup unsalted butter, softened
- 2 large eggs
- 3/4 cup AloeAdvancedâ„¢ , room temperature
- 1/2 cup warm water
I followed the instructions on the box, just substituted 3/4 cup AloeAdvancedâ„¢ in place of some of the water.  Although, just as I typed this, I realized where I messed up. My cakes didn’t come out of the pans very well and I ended up piecing them back together because I didn’t line my pans with wax paper OR parchment paper, Oops, LOL. Didn’t really matter though, because I covered them with peanut butter frosting
 The recipe for that is:
Peanut Butter Frosting
- 2 cups powdered sugar
- 3/4 cup natural creamy peanut butter
- 5 tablespoons unsalted butter, softened
- 1/4 cup AloeAdvancedâ„¢
- 1/4 cup almond milk
- 1 teaspoon vanilla
Simply just throw it all in a bowl and mix until smooth. You can add more almond milk if you want to be easier to spread.
I ended up making two round cakes and put frosting in between and all over the top. Then as if that wasn’t enough, I added mini peanut butter cups all around the edge. I did this basically because I needed to make it look nicer after struggling to get my cakes out of the pan, hehehehehehe.
